First of all, it is a good shot, nice composition, close enough, you've got the basics down. But lets be serious, the most interesting thing about a flamingo is its gorgeous color, so why would you take that away. If this was b&w film, that's fine, but if this was digital, I wouldn't recommend makeing it black and white. Something I think would look cool, is making the water grayscaled, but keeping the flamingo in color. That would make it interesting while still keeping the flamingo's best part, but if you can't do that, this is still a nice picture.

Nice photo! The B/W kind fo gives it a classic, 1920's sort of feel.
