Well, based on the actual scene... the minotaur. The centaur won't be able to guard against this on just two of his hooves

Actually, it looks like the axe will hit his shield and knock him down but the centaur would be able to give a few good blows with that huge sword before the slow Minotaur could lift the axe and swing downwards, but if he can't get the few strikes in the axe falling bundled with the Minotaur's brute strength would kill him. So it's anybody's fight now.

I imagined the strength of the Mino high enough to at least stun the Cen, considering the weight of that Axe and that powerful swing. But you could be right, too. Your explanation sounds more exciting anyway.
