What I love most about Gundam Wing is just how unique every Gundam is. Non of the series after this had such a visually unique cast of Gundams. You could recognize each of these from silhouettes alone.

The Tallgeese III was featured in Endless Waltz, but the Epyon was destroyed preventing Libra Station from falling to Earth. I imagine the Tallgeese III wasn't featured here because it's only a high-spec Mobile Suit - it might be one of the hero-mechs of the series, but it's not a Gundam.

Also (and not to seem pedantic, but) the Tallgeese is only a high-spec prototype Mobile Suit; it's built from the same titanium alloy/ceramic composite as all other Mobile Suits, whereas the Gundams are constructed from the unique and notoriously-difficult-to-produce Gundanium alloy, and aside from the Gundams themselves, only three other suit types were constructed from Gundanium in the the After Colony era: the prototypes OZ-13MSX1 Vayeate and OZ-13MSX2 Mercurius, and the OZ-02MD "Virgo" Mobile Doll. That said, it's worth noting that none of these machines are considered Gundams simply because they're built from or armoured with Gundanium alloy; only the Mobile Suits whose design models were based on the prototype Gundam Wing ZERO carry the Gundam designation in the After Colony era.
The one unique factor that the Tallgeese model line has in its favour, is that it's the base design from which all other Mobile Suits in the After Colony era are derived; the OZ-00MS Tallgeese is the original prototype Mobile Suit, on whose design specs even the prototype Wing ZERO's architecture was based. The original Tallgeese was mothballed before mass-production because the strain of piloting it was too much for the average human body to handle - it kept killing or crippling its test pilots, so the design was simplified to create the OZ-MS06 Leo, which went on to become the first mass-produced Mobile Suit.
