Description
*The following is part of the headcanon I've begun building up regarding Gaster and the world of Undertale. Although I like to base as much as possible on what's available in the source material, personal interpretation is going to be a big part of this, as well as some things that are conjured up out of whole cloth. I'm definitely no authority. This is just one fan's view of the universe presented. I hope you enjoy! The Gaster Files:
Let Us Begin At The Beginning
The Devil's In The Details (current file)
--------------------
Here is a reference sheet I worked up for all the fiddly little details that put my own spin on Gaster. This will be be a mix of both picture and written reference, and refers exclusively to the pre-void version. More information below.
P.S. I finally got Gaster to remove a little clothing and he is being salty about it, hence the untranslated wingdings
--------------------
Overall: The Doctor is known for being poised and vaguely stiff. Almost skeletal in frame, he holds himself with solemn confidence.
Colors: Gaster's body ranges from lightest ivory to bone white. This range doesn't refer to differing shades existing at once, but rather that his overall coloring will vary from time to time. He most often presents on the more bone white end of the scale. He prefers clothes that are predominately black, with white accents. He will occasionally wear sufficiently dark grey.
Face and Expressions: His cat-like (some insist snake-like) eyes occasionally give him a faintly scheming or calculating resting expression. It has been said that with his torn looking mouth, one doesn't know Gaster's true mood until his mouth stops widening. While he can easily shift into a more sinister look, he's not incapable of softer expressions. When he is angered, his eyes and mouth change as detailed in the reference image1. He doesn't appear to have a normal inner mouth. No teeth or tongue are visible when it opens. Instead, it is simply black inside, like the dark part of his eye sockets.
Walking: Gaster moves with confident strides, often at a brisk pace.
Voice: Without going into too much detail here (it will be explained in another file), how his voice sounds depends on who hears it. To monsters, he has a similar timbre and cadence as Vincent Price2. To humans, he often comes across as more distorted and hissing.
Hands: Shadow joints are not true exposed joints that occur with bone fingers, they are merely very deep creases that give that impression. The main part of the hand has the look of a solid piece of bone (as if carved3), but is as flexible as flesh.
Feet: They appear to be humanoid in general size and shape (they fit into regular shoes). Details uncertain.
--------------------
Footnotes:
1. The use of the purplish color for Gaster is an idea I've seen used by others. I prefer it over the orange-blue theory and ties well into the backstory I have for him.
2. Shout-out to who inspired this detail.
3. I believe it was who once posted a theory that skeletons might range in how their bones present. I.E. Some might have doll-like hands or feet, or fused jaws. Although Gaster isn't a straight-up skeleton (inspiration from for that), I did use the idea some in my own design.
I may add on to this, if I come up with other ideas that would fit this file.

*saddles up to read* YEE-AAAAH! This is going to help me a lot, too, now that I know what he looks like to you in your head-canon. I'm just going to go ahead right now and say that the Vincent Price was/is 200% goddamn awesome. (I love Vincent Price, not only as an actor for but a lot of the socially progressive stands he took during the 70s and 80s.)
*cracks fingers together* I must see him in a suit. yesssss, precioussssesss...

I had to fight with myself over this. Part of it was, I think, that I was afraid that as soon as I truly committed to any details my brain would go "Oh, wait, I have an idea!" Which would then completely invalidate the time I spent. It's still not quite like it is in my head, but it's as close as I'm going to get right now. The only thing I didn't add were glasses. I'm... ambivalent about them. He gets them from so many people and I hate to perpetuate the bespectacled scientist trope. On the other hand... so many Gasters look so cute or nifty with them. But I can't draw glasses worth a damn (I did try on a practice piece), so they've stayed off.
Though I've intended to do these files for a while now, I'm glad this helps you as well :3 And yesss on Vincent Price. His voice doesn't really match the 'voice' on file in the game. But almost everyone seems to change Papyrus' to a higher pitch than the game uses, so I said "What the hell, I'm going for it".
*Gaster mutters* At least it will be suit and not my undershirt.
