I know for some people it's too late to do anything UT related, but...Flowerfell would happen to be a favorite AU of mine. I don't see it as a ship between him and the human like what a lot of people tend to do...and I know that's starting a fire...but it's what I feel. I feel as though that when it got to the point where the human just couldn't do it by themselves anymore and he noticed that they were not a threat, I felt then and there is where Sans had actually managed to change his mind.

Personally, I feel as though, this is more of a redemption thing, for the monsters who had suffered so long underground to have a chance to know what mercy really is.
