I see what the creators did. Rarity is into Ragamuffin, who looks like a male Applejack, and Applejack is into Dirk, who like a female Rarity. Clever way to appeal to the Rarijack shippers. Or are they making fun of them?

Unlikely. After what happened in Rollercoaster of Friendship, it's plausible that Rarity and AJ experimented a bit. You know, the whole teenagers, hormones raging, feelings going wild, so they ay have misinterpreted their heightened feelings for each other during an emotional time as something more, so they gave it a try. This is very common for teenagers, especially for girls. It obviously didn't work since they weren't together in Spring Breakdown and Rarity began pursuing Ragamuffin (guess she has a thing for green-eyed, freckled blondes with accents), but she and AJ apparently mutually agreed that they were better off as just friends and ended things on good terms, but because of their, um, experimental history, they sometimes jokingly flirt with each other (like when their phone filter put their heads in hearts, so they smirked at each other playfully). At least that's my take on how things played out. Either way, it's very unlikely that Rarijack will happen (or like I said, it already sailed and sank).
AppleDash, on the other hand, might become canon in the future of EQG since it did in MLP. I've got to be honest though, I don't ship any of the Mane Six (or Sunset or Starlight) with each other. Not because I'm opposed to girl/girl shippings (I'm a big shipper of LyraBon for example), but because they all seem like such good, close friends that they're practically family in my eyes, and to think of them as together would feel like family members getting together to me, so I just can't see it happening. However, I do have to admit, that if I could see any of them getting together, it would be RD and AJ, which apparently happened in MLP, so it's plausible to think that it'll happen in EQG too. But who knows. The different worlds have different people/ponies in them, so in some cases, different relationships will form in one world that wouldn't form in the other.

The way I see implications, thee's no point to them if they're not true. And the conversation they had, at least, implied that they lived together, and with the way the two of them are, I can't see why they would live together unless they were a couple. I mean, I guess you can argue that AJ moved out of the farm so Big Mac and Sugar Bell could start a family, but that seems unlikely. And I guess you can also argue that RD was simply helping AJ with her chores, but the way the conversation played out, it sounded more like a conversation a couple would have, and it also seemed the more likely scenario. Like I said before, I don't ship any of the Mane Six together because they feel more like family, but if I could see any of them getting together, it would have been AJ and RD. But I also base AppleDash being canon on the mobile games description of their future selves profiles, all of which were accurate. Twilight's said she would be a just ruler of Equestria and would be really tall (confirmed). Rarity's said she would have a creative future full of new designs (confirmed). Pinkie's future was said to be dangerously cheesy (confirmed and CheesePie is canon). Fluttershy's said her future would be full of caring critters and charming chaos (confirmed and Fluttercord was implied, or shown that they at least live together). Starlight's said her future would be full of happy students and sunny days (confirmed and Starburst was implied both in and outside media). Sunburst's said his future would be full of rewarding research and starlit nights (confirmed and further implying that Starburst is canon). Then for AJ, her future was said to have a booming business and a loyal relationship (confirmed and RD's element is loyalty, further implying AppleDash to be canon), and RD's future was stated to be full of captain's bars and a good honest life (confirmed and AJ's element is honesty, further implying AppleDash to be canon). Those profiles are worded very specifically; you don't use that kind of wording unless you're saying something. So since the future profiles of all the characters were confirmed in every other area, including the couples (CheesePie confirmed, Fluttercord implied, Starburst implied, and AppleDash implied), it seems like more than a safe assumption that AppleDash is canon. Perhaps we'll see them actually get together in Season 10, which is going to continue comic form.
Again though, this is for MLP. With EQG, things might end up differently. Different circumstances, different events, different people, different relationships. For example, human Derpy and human Bulk seem to be a couple, but pony Derpy doesn't seem to be single and Bulk is apparently dating Octavia according to Discord. Further evidence, Sci-Twi is in a relationship with Timber (who doesn't seem to have a pony counterpart), while Twilight is seemingly single, unless she has a spouse (possibly pony Flash) offscreen. So yeah, different world's different relationships. So is/will AppleDash become canon in the EQG universe as well. Possibly, but we don't know since the series ended before it happened. But they are teenagers in that universe, and their pony counterparts didn't get together until at least their 30s, so maybe it'll happen in the future.

Sorry, can't help you there. I don't always accept all the ships a movie/book/series results in, but I do accept what's canon. But hey, we always have fanfiction.
