Well, you can look at it this way: When you get a new dog/puppy, does it fully understand you or do you have to train it? Truth be told, there are things you don't understand about the dog and, in a way, the dog has to train you in return so you know when it's hungry, thirsty, or bored.
Sure, this symbiote is connected to the minds of the hosts that wear them, but they don't speak the same language. These suits communicate through emotions, moods, and pure instincts. These are all very effective means of communication, but it's not like a person can publish a book filled completely with grunts and movement twists. They have a long way to go before they can understand each other and accept one another.

That was a lot of words, and thankfully I understood every one of them, but I guess this emotional growth for the syms is going to including times when they 'accidentally' take control of their hosts at unexpected times

Well yeah, sticking the with dog analogy, these things behave as sentries. They want to guard and protect their hosts like a dog wants to guard and protect its own. The problem of course is that dogs have this assumption that everyone that comes to the door is an intruder. From pizza delivery to mail, dogs will bark at everyone standing at the door in the same way. So it will be interesting what puts these syms (Or Grafts as they are called in this fiction
