Well observed.
In my chemistry class, we learned about the temperature differences between each zone (layer) in a single flame - we found that the outermost is hottest, while the innermost was coolest.
I believe it had to do with the external being exposed to oxygen, while the internal was in contact with object (usually candle wick).

Right ? I always think back to that when novels mention or when movies have flames other than the colour red/orange/blue.

Definitely.
I've seen it mostly associated with villians - the first one that pops into mind is the fire that Maleficient in dragon form breathes.
