what allows you to see through the eyes of the mask? is it a fabric

The eyes are made from a plastic mesh-like material, so there's limited visibility.

I always wondered - how good can you see in one of those Rider helmets?

At best, to a limited degree XD. My vision was pretty much just several holes in the front of the eyes of the helmet, so that totally rules out any vision to the extreme left and right.
Taking that the helmet lenses have a tendency to fog up, you've got yourself one blind Rider
