Turians can only mate with quarians and turians, and vice versa. Its because their the only dextro-protein races or something.

Explain that Asari and Krogan relationship in ME2 at the Citadel. She had to tell him their children would be asari not krogan.

Asari are the only species that can reproduce with EVERYONE no matter their gender or species because they uses mental reproduction, no sexual reproduction. Liara told this to us in ME 1, a quarian can't reproduce with a turian (Because quarian were mammals like humans, but they can't reproduce each other because of difference of species)
And, like you said, Asari/mate (no matter his gender/species) would always be a asari.

Idk I could think of a lot to go on. But then again I can ship anything if I try hard enough (Tali/Miranda??). There was a lot of teasing between them and their original recruitment intertwine (and as Wrex is impossible to love and is too busy either being dead or boning the female krogans), both kind of techy and awkward.
Eh the golden rule is anything is shipable if you think hard enough, so long as if you don't be obnoxious about it or rude.
