Yay, got another part done.I think I got all the ways to do a conversion, if I did miss one please let me know and I'll add it.
Part 1 . Basic colour theory.

I haven't tried that one yet, but there is a trial version. I'll give that a spin and see what it can do.

The simple one is Image->Greyscale.
A few of the others are;
Image->Arithmetic
Adjust->Color->Channel mixer
Adjust->Hue and Saturation->Hue/Saturation/Lightness
Effects-> Photo Effects->Black and White Film

I usually use Effects->hoto Effects->Black and White Film.
I didn't really know about the others (apart from greyscale) I'll have to try them all out now Thanks very much Thomas

I use a similar one in PS as I find it gives the most control over what I want to achieve.
