This might count as a kind of AU/head-cannon, where Riley is watching "Big Hero 6" during the family's move to San Francisco. (Her parents might've taken her out for a treat to make up for moving away, maybe to even hype her up that San Francisco would be exciting like San Fransokyo.)Plus, if watching the movie took place before the story, such a heart-breaking (if funny) Disney movie could've contributed to Riley's sad feelings growing stronger after the move.
When Riley watches the scene where Baymax shows Hiro videos of Tadashi's previous test, one video reaches out to Sadness: "I'm not giving up on you. You don't understand this yet... but PEOPLE NEED YOU."
That night, while Riley is asleep and when none of the emotions are looking, Sadness finds herself drawn to the memory of Tadashi's test videos. It just felt like it was calling her name, crying out to be held! And when she holds the memory, it becomes the first happy memory to turn into a sad one. Although she didn't mean to, Sadness notices that the memory looks better in blue somehow, more beautiful and poignant. Especially with the part where Hiro is tearfully smiling, even though he's crying. And it givers her hope that maybe one day, just like with Hiro, she can put a smile on Riley's face without having to make her happy.
I'm not trying to get Sadness and Tadashi together or anything.
I wanted to give her one shred of happiness to hold on to, after 11 years of being treated like a pariah.
And maybe in real life, the world needs to stop and feel sadness more often.
Perhaps the message here is, sadness isn't always an indication of misery. Sometimes, it means you appreciate something beautiful.

I don't know, except that I had an epiphany: I realize how and why Sadness kept turning the memories all sad! Because they were from Minnesota! If she had held a happy memory from San Francisco, chances are it would've stayed happy. But the Minnesota memories turned blue because they signified she was homesick.
So maybe, the real reason she could turn the movie memory blue was because it was the very last memory of Minnesota, before they drove out of the state for good.

Aw I love this crossover! These two movies really did share a similar theme. I could see Riley watching this to get excited for the move, too.

It's interesting to imagine a fictional character watching a real-live movie
Not to mention how interesting it would be if it turned out Riley based her dream boyfriend ("I would die for Riley!") off of Tadashi.
She would have a crush on Tadashi, and want a guy like him who is selfless and heroic.
