I don't think there's any official indication that she does. But shippers don't let such petty things as canon get in the way of their ships.

From the game itself, you could look at it as a crush or affectionate friendship. Probably the latter since Kokiri don't age or reproduce (as far as we know anyway) but then again Mido did show sings of a crush on Saria. Personally, I think their relationship is something like a close, almost brother-sister like friendship, but still platonic. It's possible Saria may have wanted them to be more than that, back when everyone thought he was a Kokiri, but would've realized the problems with something like that when she learned the truth. It is interesting to contemplate though, what with Saria being much older than Link but Link growing and aging; talk about a complicated relationship
