If Apple Bloom were a princess, I would imagine her being called the Princess of Rebirth.
When she was first introduced, I always pictured Apple Bloom as a "fixer." Specifically, I thought her special talent would be making things new again. She repaired things around the farm on a few occasions, she spruced up Applejack's old clubhouse so the CMC could make it their headquarters... That trend made me believe that she'd also be good at making ponies' lives feel like new, too, reinforced by pics I've seen of her getting all friendly with Silver Spoon.
So, yeah. In my eyes, Apple Bloom is the handimare of life. She takes old objects/lives and makes them feel fresh and stronger than ever. I mean, she has the word "bloom" in her name, for Celestia's sake! That's what plants do each spring: revive again after lying dead in winter.

Do we even have proof of where their parents are? Everything so far is fan theory( they're dead), so I don't buy it.

The thing is, with them, you have a child like Apple Bloom whose home we've gotten to see many many many times over the years (unlike, say, Scootaloo, whose completely unseen home life could well be perfectly normal) and not once ever have her parents been treated as a thing that exists, as we see all the parental and adult-of-the-house things done by AJ, Mac, or Granny Smith. The one mention of them ever was a "they'd be so proud" thing late in season five.
Proof of death? No. But they're complete and total non-entities for some reason and theories only get less plausible from there. After "the reason why it's like they're dead is probably because they are," you get into increasingly fanfic-like scenarios.
